The point of that whole bit by Doug Stanhope is to make fun of
everyone. Every religion, people, culture, belief system, is dumb in its own ways, funny in its own ways, beautiful in its own ways.
I believe it's possible to make jokes about any subject. It is the content of the joke, and the target of the joke, which is where lines can be crossed.
E.g. Thomas's joke above. What's the subject? Racism. What's the content? A racial slur, and a weird statement claiming the best *s are dead *s. Who's the target? It's not really clear. Is it black people? Is it racists? Hard to tell.
I would say that Thomas's joke is a bad one. It does, in fact, just seem racist - it uses a racial slur without any justification, it doesn't have a clear target, it's not at all clear if the punchline is ironic or not. That is, if you can call it a punchline. Even if it's supposed to be ironic, it's a shitty joke.
Doug Stanhope's bit, on the other hand, justifies itself in reference to all of the other jokes he makes, it is clearly wrapped up in irony, and is really, really funny. I'm willing to bet that you could show that bit to a Jewish person, and the chances are he or she would love it.
